Mango sticky rice is a delicious dessert from Thailand. It is made with glutinous rice, coconut milk, sugar, salt, and ripe mangoes.

My significant other fell in love with mango sticky rice having first tasted it in Thailand many years ago. The only chance we get to eat it is when we chance across the occasional Thai fair in the Klang Valley.

Recently the mango season came in full abundance in the markets. With so many fresh fragrant affordable mangoes, I couldn’t pass the opportunity to make this delicious desert.

It is a simple desert to make. The most important ingredient is the mango must be sweet and ripe enough. Next is soaking the glutinous rice and cooking it with coconut milk.

Fresh coconut milk is best but those that come in boxed form works as well if you cannot get fresh coconut milk.

The sticky rice is cooked with coconut milk and then mixed with sugar and salt to give it a sweet and slightly salty flavor. Make sure the rice isn’t too dry or too wet.

You want the rice to have a nice bite to it. Next place the mangoes that are peeled and sliced and served on top or on the side of the rice.

Drizzle extra coconut milk on top if you prefer and enjoy a quick simple dessert.

This is the creation.
